1 Avocado small
1/4 cup Walnuts
1/2 cup Blueberries
1 Cup Greek Yogurt
1.5 Tbsp Feta
1 Tbsp Lemon Juice
2 Tsp Apple Cider Vinegear
2 Sprigs Parsley

Prep Chicken Breast

Place the chicken in a large pot and season them with salt and pepper. Then, cover the chicken with water and bring it to a boil. When the water is boiling reduce the heat and let it simmer for 10 - 15 min. depends how big they are. For safety, they don’t have to be pink in the center. After that, shred the chicken with a fork and let it on a side.

Prep Eggs

Boil the eggs if they aren’t boil already. And after cool them cut them in smaller pieces.

Prep salad

Place the baby spinach in a salad bowl and add all the ingredients on top: the sliced avocado, the shredded chicken, the boiled eggs, the chopped walnuts and some blueberries.

Mix all together.

Chop Parsley

Dressing Mix

Place all the ingredients in a pot: Plain Greek yogurt, lemon zest and juice, apple cider vinegar, your cheese choice, and the chopped parley and mix it with a blender until get a smooth consistency.
